Alternatives To The Multitier Wedding Cake

 Instead of a single—and expensive—multitier wedding cake, some couples are serving up something different.

TREND ALERT | Traditional multitiered wedding cakes are expensive. Top Vancouver pastry chef Peter Fong of Ganache Patisserie charges on average $9 per guest for his wedding confections, while Sweet Thea, former pastry chef at some of B.C.’s very best restaurants, charges between $5 and $6 for hers. There’s no doubt that both of these talented cake makers make cakes that look and taste exquisite, but with so many other expenses plus guests to wine and dine, is it really necessary to spend between $600 and $1,000 (for an estimated 100 plus guests) for a delicious, eye-catching wedding cake?

One woman I know who was married last year took a multiple cake, rather than multitier cake, approach at her reception, offering guests no fewer than six lovely single-layer cakes to enjoy. “Everyone told us how much they liked being able to sample so many different cakes,” the groom reported to me, adding that all six cakes cost nothing remotely close to the price he’d been quoted for a single multitiered one.

1 IMG_2730Our daughter, a designer, selected two classic two-tier cakes for her wedding reception earlier this month. One was all creamy white—a vanilla sponge filled with coconut cream and frosted with Chantilly cream and coconut shavings—the other all chocolate, a vegan sponge layered with vegan chocolate mousse. Each cake cost $125 and was ordered straight from the Whole Foods cake menu (in West Vancouver). Together they served 100-plus wedding guests (there was also a sweet table), with an entire layer left over for a family gathering the next day.
